Crockpot Chicken Bowls

So my friend Katy sent me a pinterest recipe. I was asking for recipes that are easy and mindless and take like zero time. Because life and kids and all the things! So here is my adaptation from Katy’s genius recipe ideas!!

Ingredients:

4 chicken breast (frozen or thawed)

1 can black beans

¾ can of salsa ( i LOVE fronterra chipotle)

1 cup rice

1 cup+ chicken broth

1 cup frozen corn kernels

Salt

Pepper

Adobo Seasoning

Optional:

Shredded Cheese

Green Onions

Tortilla chips

Avocado

Spinach


Instructions:

Place chicken in the crockpot and cover with chicken broth and add in almost a full jar of salsa. Add in 1tsp salt, ¼ tsp pepper and ½ tsp adobo seasoning. Set your crockpot on it’s lowest setting. Cook for 1-2 hours depending on how fast your crockpot cooks then add the beans, corn and rice.  Cook until the rice is tender and add more seasoning to taste. Shred the chicken in the crockpot with a fork.

To make the bowls, add a layer of tortilla chips first (optional) then top with some spinach and add in the chicken, beans and rice mixture.  Top the bowl with cheese and green onions if you want more pizzaz. When i’m in a pinch i make the recipe alone without any chips or spinach and without topping and it’s still JUST as good! PLUS the kids LOVE it!!
